Fossil oyster caves to Sainte-croix-du-mont
Sainte-Croix-du-Mont is home to a geological site unique in France, made up of oyster fossils overlooking the Garonne. Dated at 22 million years by geologists, the oysters accumulated at the bottom of the seas during the Tertiary era and then found themselves overhanging the valley after tectonic movements at the end of the Tertiary and the retreat of the waters. Erosion dug caves into the thickness of the bench, which are still used today to preserve sweet white wine (summer tasting). From the oyster bed, you can enjoy a magnificent panoramic view of the Sauternes region.
